Makes: 2 ½ cups
This Pink Hummus combines earthy sweetness from the beets, savory chickpeas, and a touch of tahini, all brought together with a burst of lemon.
It’s an easy-to-make snack that’s perfect for dipping veggies, or spreading on a rice cake!
Plus, as it’s Valentine’s Day (at the time of posting1), it’s a perfect way to show your heart—and your brain—some love!
Ingredients
- 1 400g tin chickpeas, rinsed & drained
- 2 large (200g) pre-cooked beetroots
- 2 tbsp hulled tahini
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp sea salt
Method
Combine the Ingredients: In a high-powered food processor or blender, combine the chickpeas, pre-cooked beetroots, tahini, lemon juice, olive oil, minced garlic, and sea salt.
Blend: Process the mixture until smooth and creamy. If you prefer a slightly thicker consistency, you can add a little extra olive oil or water to loosen it up.
Serve: Transfer the dip to a serving bowl and, if desired, sprinkle the top with a few chickpeas or a swirl of olive oil!
Storage: Keep any leftovers stored in an airtight container or jar in the fridge for up to 4 days. This dip is great for meal prepping or enjoying throughout the week!
