Some recipes become part of a memory, and this one definitely has.
I baked this beautiful Polenta, Mandarin & Almond Cake for our Pilates and Journalling Evening at Westwood, last night, and it completely stole the show. Moist, zesty and naturally gluten free, it felt like sunshine on a plate. ☀️
It disappeared very quickly!

More importantly though, it perfectly reflected the feeling of the evening itself.
We spent a few hours slowing down, moving our bodies with intention, taking time to journal, connect and simply be. There was no pressure to achieve anything, just space to breathe, reflect and reset.
A huge thank you to Anna, our wonderful journalling facilitator. She guided us so gently through the evening, asking thoughtful questions that encouraged us to pause, celebrate how far we’ve come, and think about where we want to head next. It was amazing to watch everyone open up, support one another and leave feeling lighter.
These evenings remind me that wellbeing isn’t just about exercise. It’s about community. It’s about creating moments where your nervous system can soften, your mind can become quieter, and you leave feeling more like yourself again.
To everyone who joined us, thank you for making it such a special evening. I already can’t wait for the next one.
